Ingredients

package Betty Crocker® white angel food cake mix
2
cups boiling water
1
package (8-serving size) lemon-flavored gelatin
1
can (6 ounces) frozen lemonade concentrate, thawed
1 1/2
cups whipping (heavy) cream

  • 1 Heat oven to 350ºF. Bake and cool cake as directed on package for angel food (tube) pan.
  • 2 Pour boiling water on gelatin in large bowl; stir until gelatin is dissolved. Refrigerate about 15 minutes or until thickened but not set.
  • 3 Add enough cold water to lemonade concentrate to measure 2 cups; stir into gelatin. Beat with electric mixer on medium speed until foamy.
  • 4 Beat whipping cream in chilled medium bowl on high speed until stiff; fold into gelatin.
  • 5 Tear cake into about 1-inch pieces. Fold cake pieces into gelatin mixture. Spread in ungreased rectangular baking dish, 13x9x2 inches.
  • 6 Cover and refrigerate at least 4 hours until firm but no longer than 24 hours. Cut into squares. Store covered in refrigerator.

This was probably my mother's all-time favorite dessert recipe, especially after a heavy, spicy meal like lasagne. Light, cool, refreshing. For those who had difficulty with the final product being too loose, make sure if you're using a daiquiri mix that it doesn't have any alcohol in it, which will prevent the gelatin from hardening up.

Like Lava0055 said, it took much longer than 15 minutes for the jello to get to soft serve, more like 40. Like 3Dox-mom, I also used strawberry daquiri mix, and since I was serving a large crowd I made a second one using limeade and lime jello, since I had them on hand. Instead of whipped cream I used cool-whip with some crushed pineapple mixed in. I liked this dessert very much; it was refreshing and not too sweet, but it was a little too liquidy. I put one of each flavor on the plate with a little dab of whipped cream and people loved it just the way it was, but when I make this again (and I definately will) I will add another angel food cake, maybe after it's set, since the few pieces that didn't absorb the fruit looked very pretty.
