Lemon Chicken Pasta
Healthy Lemon Chicken Pasta
whole boneless skinless chicken breasts
tablespoons chopped onion
cup dry cooking sherry
cup lemon juice (1 full lemon squeezed I usually add a little more than that)
cup chicken stock
whole tomato diced
box whole wheat spaghetti noodles
Cook the pasta as directed on the box. Brown the chicke in the Promise 5-6 min. Remove chicken from pan and dice into bite sized pieces. Cook the remaining Promise thats left in the pan, diced garlic and onion for 3 minutes. Add flour and stir constantly for 2 min. Wisk in sherry and reduce heat for 1 min. Wisk in lemon juice and chicken stock. Finally add the chicken back into the sauce, serve over noodles and garnish with scallions and diced tomatoes.
