Ingredients

box Betty Crocker® SuperMoist® lemon or yellow cake mix
1/4
cup butter or margarine, softened
3
eggs
1
package (8 oz) cream cheese, softened
1
cup powdered sugar
2
teaspoons grated lemon peel
2
tablespoons lemon juice

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). In large bowl, beat dry cake mix, butter and 1 of the eggs with electric mixer on low speed until crumbly. Press in bottom of ungreased 13x9-inch pan.
  • 2 In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Gradually beat in powdered sugar on low speed. Stir in lemon peel and lemon juice until smooth. Reserve 1/2 cup; refrigerate. Beat remaining 2 eggs into remaining cream cheese mixture on medium speed until blended. Spread over cake mixture.
  • 3 Bake bars 23 to 28 minutes or until set. Cool completely, about 1 hour. Spread with reserved cream cheese mixture. Refrigerate about 3 hours or until firm. For bars, cut into 8 rows by 6 rows. Store covered in refrigerator.

Made these...yum! Used lemon cake mix with dry lemon pudding mix and added and an extra egg and about 1tsp veg oil (as someone else suggested.) i also used all of the cream cheese mixture for the cheesecake layer before baking then made extra topping, as several people suggested it needed more frosting. Baked in a 9x13 glass dish for 15 min, then turned it in the oven to be sure of even baking, then baked for another 12 min, until just set (checked cheesecake layer with a toothpick.) For "frosting," I creamed together 6oz cream cheese, 1/4 C white sugar, 1/2 C powdered sugar, 1/2 tsp pure Mexican vanilla and 2 TB lemon juice, then added about 1/3 C heavy whipping cream and beat for an extra minute on medium speed. Chilled in fridge for several hours. It was our 10pm dessert after I picked up my visiting sister from the airport last night. Absolutely delicious! May top it with fresh strawberries for breakfast this morning!

These were truly amazing, and I don't like lemon desserts, but this one I could not stop eating! Very easy to make and simply delicious. I just used lemon juice and left the lemon peel out and they were wonderful.

I tweaked these bars a little bit by adding lemon pudding, an additional egg, and 1 tablespoon canola oil to the bottom layer. I made the cream cheese layer and topping as directed. The bars are good - not too sweet and nicely lemony. I baked them until just set so they didn't get tough on the bottom.
