I LOVE these! so good, and from the looks of the empty container just a short time after i opened it,everyone else loved them as well. i put more filling then it calls for but the top piece wanted to slide off, so, this time im going to make regular cupcakes, "core" them, and pour the filling inside..plug with a piece of the part i cored out, and drizzle the glaze. i made fondant rozes and dropped pearls on the top, so pretty! A+ from me!

What a wonderful surprise these were! I was at my salon when a small wedding party came in with these cupcakes. They graciously shared! Not only are these a show-stopper but they were moist, sweet n tart! The baker also made the red raspberry hibiscus champagne! Great day at the salon! I'll be baking these up for my friend's birthday in Aug....and serving the champage with them! Super!!

Wonderful!!! I made them for my girlfriends 10TH Anniversary renewal of their vows. I made large cake with cake pans & then made enough of the cupcake size for each of the guests (It was easier to take home.) I ran eatable pearls all around the table. It came out absolutely beautiful. This was my gift to the both of them.

I LOVE lemon and most lemon recipes aren't as lemony (is that a word?)as I would like. This was perfect! I loved them and so did my husband who thinks most lemon recipes aren't as good as I do. My kids LOVED the cake and the icing, but they wanted me to scrape off the filling. I think it would be great as a sheet cake without the filling too, but them you couldn't eat any extra cake before the event :) I didn't have any champagne, so I used spite. I too had to add more juice/water to the icing to get it thin enough to drip down the sides. Very easy and now a family favorite!

This was a marvelous recipe. I added sliced strawberries and black berries for a garnish and made my own lemon curd. Not a crumb left!

These were very delicious... I made them but realized I did not have a bisquit cutter so I used my mini bread loaf pans. I agree with cdm56 about the champagne and the glaze. Since I baked mine in a pan and could not do the filling as directed, I just mixed the filling and the glazed together and it tasted great plus the consistency was not as thick. Amateur baker indeed but it turned out so refreshingly sweet... Thanks for the recipe!!! Will definitely make it again, this time with tweaks and a cutter ready...

I just made these tonight - they are delicious - but I was a little disappointed that the champagne didn't really add to it - you could sub 7-up, sprite, etc, and I think the carbonation in those would work better than champagne. That being said, there are a few tweaks needed, I think. The lemon curd/sour cream mixture needs to probably be double - I used a tsp on each cupcake, and I scraped a knife across the the tsp to make sure I wasn't using too much, also, I think it will give you a little extra to put between the cakes - also needed. The glaze was way too much and way too thick - I didn't have enough lemon juice, so added water a little at a time to get consistency that I wanted. This was the first time I had tried the foil lined pan, so you can lift cake out w/ease - I am SOLD on that - that was soooo easy, could not believe it! I used the flour non-stick spray, and I am now also a fan of that! So much easier than greasing and flouring the old fashioned way! I also had some left over prepped strawberries for shortcakes - and I added some of the juice on top of the cakes - oh my, did THAT add some beautiful color! Also, I have been looking for a way to incorporate lemon curd into a recipe, I love it, good stuff! And I think if I do this again, will make a simple layer cake, with the tweaks I added - it DOES taste very yummy, and the strawberry juice just adds to it!
