This cake is amazing!! So easy but yet scrumptious! I couldn't find raspberry pie filling so I used raspberry preserves and I can't imagine it turning out any better. Served this at a baby shower and everyone LOVED it!! Def a keeper!

This is a really wonderful cake. The lemon and raspberry flavors go very well together. I also made a version of this with white cake, which made the process easier since I used a cake mix. I think I liked that cake even more! It was a huge hit at a baby shower I hosted. I actually heard guests say it was the best cake they'd ever eaten! And the pink and white was perfect since the baby is a girl.:)

Best cake I've ever made!!! I added about half a package of softened cream cheese to the mousse. This is a new family favorite!!! I don't know why some people rated this recipe low. They didn't even have the decency to write a comment and explain themselves. People should't rate recipes if they don't try them.

This recipe was great! The only thing I did extra was add just a tiny bit of fresh lemon juice. I took the extra time to strain out the raspberry seeds and the frosting was perfection. This is something that I will definately bake again. Delicious.

I made this for Easter and everyone loved it, my sister asked if I would make it for her birthday. It was so moist and refreshing since we are finally starting to get some nice weather(cleveland). I did make small white choco curls and put them all around the bottom for extra decoration, it was awesome. very easy as well

This cake was awesome!! Made it for a birthday for someone who loves reaspberry/citrus combo. Everyone loved it!! Very moist cake and light topping in the mousse. My recommedation would be to add the lemon zest after youve mixed the cake mix if you are using an electric mixer, a lot of my zest got stuck to the beaters. So mext time I will fold it in after mixing. Also take the time to make the mousse, it only takes a couple mins to whip the cream, and its SOOOO much better than cool whip, cool whip tastes so fake!! All in all, wonderful cake, recomment to those who like lemon cake for sure.

I never write reviews for recipes but I signed up as a member just so I could say that this recipe is amazing!!! I usually prefer baked goods made from scratch, but the buttermilk make this cake so moist that it was spectacular (I got great reviews). I also don't like icing so the mousse was a perfect substitute. I used a little lemon juice instead of rind, blackberry instead of raspberry filling and I would recommend taking the time to strain out the seeds for the mousse.

This cake was a hit! It is super moist. I used cool whip instead of making my own mousse too. Saved some time this way. It worked well, and no one could have noticed the difference.
