This frosting was life-changing! Man! You thought buttercream was good by itself? Forget that. That was your past life. Your life before lemon buttercream. Nothing on your future path will ever be the same after you try this frosting. Protips: We used zest from 4 lemons total for the Lemon Cupcake recipe with this frosting. Don't start making the frosting until the cupcakes come out of the oven since they have to cool for 30 minutes, and you don't want this to get crusty. Recipe as written makes 7 metric tons of frosting, good if you use a pastry bag to do fancy frosting. Halve the recipe if you're doing just a thin layer of spread, which is just great for the desired level of sweetness. We topped with red granulated sugar for a pretty effect.

Nice Icing! I like this recipe. Didn't put the lemon peel in and used it with a boxed lemon cake.
