Ham and Swiss cheese make the perfect pair in this zesty pasta salad that's hearty enough to make a meal.
cups uncooked rotini pasta (6 oz)
cups 1-inch pieces asparagus spears
cup diced cooked ham
tablespoon grated lemon peel
clove garlic, finely chopped
cup olive or vegetable oil
cup sliced fresh basil leaves
cup shredded Swiss cheese (2 oz)
Cook and drain pasta as directed on package, adding asparagus during last 3 to 4 minutes of cooking.
Return pasta mixture to saucepan. Stir in ham, lemon peel, garlic and oil. Cook over medium heat, stirring occasionally, until hot. Stir in basil. Sprinkle with cheese.
If you don't have fresh basil, use 1/2 cup chopped fresh parsley and add 1 teaspoon dried basil leaves.
