Pineapple cream cheese and peach preserves balance spicy cocktail sauce in a lovely spread that's ready in 15 minutes.
container (8 oz) pineapple cream cheese spread
cup peach or apricot preserves
tablespoons seafood cocktail sauce
bag (4 oz) frozen cooked salad shrimp, thawed, drained
medium green onions, thinly sliced (2 tablespoons)
cup coconut chips
On 10- to 12-inch serving plate, spread cream cheese to within 1 inch of edge of plate. In small bowl, mix preserves and cocktail sauce. Spread over cream cheese.
Top evenly with shrimp. Sprinkle with onions and coconut. Serve with crackers.
This recipe updates a favorite classic shrimp spread with fruit flavors for a little sweetness.
Coconut chips are larger than flaked or shredded coconut. They can usually be found in the baking aisle. Flaked coconut could be substituted.
