To fix some of the problems other listed below: Use 1 tsp lime extract and 1 tsp lime zest in the cake batter. Cook as directed and cool. To help with the two frostings....I put the filling in a lg pastry bag and filled the cupcakes (insert tip 1/2 way into cup cakes and fill until the cupcakes slightly swell) then frost with 'frosting'

These are SOOOOOOO delicious. My only problem was that I made them to take to work (frosted them in the morning after making the cupcakes and the fronstings the night before) and by the time I got to work some of the frosting had slipped off. No matter, they are delicious. I made the recipe just as described, but next time I might try to cut some calories and fat by experimenting with cool whip. I used the bottled Key Lime juice and it worked very well - just enough lime flavor. People loved them.

Theses cupcakes were delicious and I got lots of great comments from the teachers at school once I got them to try them!! Be careful - they do not do well in the heat. I iced them in the morning on cool cupcakes from the night before and by the time I got them to school many of the toppings had slid off. I was kind of confused making them with the word "filling" when they really have 2 icings. I might suggest making them the night before and refrigerating them overnight before trying to transport them anywhere.

I gave it only 3 spoons because the actual cake was not that good. However, the topping was excellent and everyone loved it! I used a white cake instead and I decided to take the lime zest and lime juice from the frosting and add it to the cake instead. The topping was enough, I felt more frosting would be over the top. The cake had little flavor to it even after adding the lime, it was just a box cake. I would like to have more punch for the flavors in the actual cake, but the topping was fabulous.

i havent made this yet.major fan of key lime.it looks good.my question is for the filling.how do you put that in there?after the cupcakes have cooled? if that is the case how do you put the filling in there? i did like the idea of what someone said about cutting the cupcake and making it look like a big X and putting the filling in cupcake.then later put the icing on it.im not that experienced when it comes to cooking so all help is needed.

I made these and they were delicious.I tried putting the filling inside the muffins and I think I liked this more.I was wondering if I could do this to the Strawberry and Cream cupcakes.I haven't looked at the grocery store for strawberry pudding,but if they have it I think I will try that.Thanks for such good recipes.jackie

These were good. I left off the white frosting and just dusted them with lime zest which was nice but next time I think that I will use the filling and actually fill the cupcake and use the white frosting to frost the cupcake and dust with a lime zest.

We love these...I make them often. Usually, I just use a little whipped cream or even whipped topping (depending on how much time I have) because I'm not a big fan of frosting. Also, I add a little more lime juice to the filling to make sure it has enough zing! I just made these for a bake sale at school and I've had sooo many requests for the recipe.

I modified a bit. I substituted fresh lime juice for water in the cake mix, then cut an x in the cup cake and put the frosting inside. My 5 year old picked these for her birthday and I thought the girls would like the surprise inside the cup cake. I will certainily make these again!
