Key Lime-White Chocolate Cookies

cup butter or margarine, softened

cup packed brown sugar

tablespoons granulated sugar

teaspoons vanilla

cups Original Bisquick® mix
Green food color, if desired

package (6 ounces) white baking bars (white chocolate), cut into chunks
1
tablespoon grated lime peel
  • 1 Heat oven to 350ºF. Beat butter, sugars, vanilla and egg in large bowl with spoon until well mixed. Stir in Bisquick mix. Stir in 6 drops food color, white chocolate chunks and lime peel.
  • 2 Drop dough by rounded teaspoonfuls onto ungreased cookie sheet.
  • 3 Bake 8 to 10 minutes or until set but not brown. Cool 1 minute; remove from cookie sheet to wire rack.

For perfectly shaped cookies, use a small ice-cream scoop to drop cookie dough onto the cookie sheet.

To save time and cleanup, tear off several sheets of cooking parchment paper to line cookie sheets. Simply bake cookies as directed. When used correctly, the paper won't burn and can actually improve the texture and appearance of your cookies.

    My son and I made these this evening and both he and my husband liked them a lot! I would agree that the recipe could use more lime flavoring as it is very faint and would be good with more lime to counterbalance the white chocolate. I wasn't sure how Bisquick mix would work with cookies but the texture turned out just fine!

    Like other reviewers, I used a lot more lime peel than was indicated in the recipe, about 3 Tbsp. But these cookies are wonderful! I'm not even a fan of lime flavor and I loved these.
