1/2: cup butter or margarine, softened

3/4: cup packed brown sugar

2: tablespoons granulated sugar

1 1/2: teaspoons vanilla

1: egg

2 1/3: cups Original Bisquick® mix

: Green food color, if desired

1: package (6 ounces) white baking bars (white chocolate), cut into chunks

1: tablespoon grated lime peel

Save $$$ on your favorite brands

1 Heat oven to 350ºF. Beat butter, sugars, vanilla and egg in large bowl with spoon until well mixed. Stir in Bisquick mix. Stir in 6 drops food color, white chocolate chunks and lime peel.
2 Drop dough by rounded teaspoonfuls onto ungreased cookie sheet.
3 Bake 8 to 10 minutes or until set but not brown. Cool 1 minute; remove from cookie sheet to wire rack.

My son and I made these this evening and both he and my husband liked them a lot! I would agree that the recipe could use more lime flavoring as it is very faint and would be good with more lime to counterbalance the white chocolate. I wasn't sure how Bisquick mix would work with cookies but the texture turned out just fine!

Like other reviewers, I used a lot more lime peel than was indicated in the recipe, about 3 Tbsp. But these cookies are wonderful! I'm not even a fan of lime flavor and I loved these.
