My son and I made these this evening and both he and my husband liked them a lot! I would agree that the recipe could use more lime flavoring as it is very faint and would be good with more lime to counterbalance the white chocolate. I wasn't sure how Bisquick mix would work with cookies but the texture turned out just fine!

Like other reviewers, I used a lot more lime peel than was indicated in the recipe, about 3 Tbsp. But these cookies are wonderful! I'm not even a fan of lime flavor and I loved these.

I live in Miami, the heart of Key Lime country. I've tried the mass-produced version of this cookie, and like most mass-produced cookies, they are too crunchy and dry for my liking. I was thrilled to find this recipe, and even more thrilled with the results. I used plenty of lime zest, more than was called for, and the cookies turned out plenty zestful. I was also pleased with the use of Bisquick, and pleasantly surprised by the quality of cookie produced. I'd love to see more cookie recipes that use Bisquick. The one change I made was I used 6 oz. of white baking chips instead of fooling around with chopping a white baking bar; I thought they were just great, and so did my husband's co-workers!

I followed the recipe exactly and the parchment paper helped them turn out perfectly. I did put the lime peel in a blender so it would be finer and more intense flavor. Great cookies! I paid for an expensive box at a specialty store which resulted in my search for this recipe. They were better!I'll certainly make them again.I'm making myself sick eating them this morning!

You can barely taste the lime flavor. I don't quite understand why lime zest was used bot not the juice. You get just the slightest hint of a lime aftertaste, and I was hoping it's be more of a prominent flavor. I would add lime juice and maybe use less vanilla to compensate.

Oh, oh, oh my gosh. Used lots of zest (maybe 2 1/2 T?), and lime juice instead of vanilla. Holy magoly they're so limey and yumyumyum. Used 12 drops of food colouring instead of 6, they would be perfect for a circa-1991 TMNT-themed birthday party, non? I worried about the brown sugar, because brown sugar is a warm flavour, while lime is a cold flavour, but, it works out just fine. <3333 )

These cookies were the best! They had a nice lime flavour and the sweetness of the white chocolate balanced out the tartness of the lime. I was hesitant at first to use bisquick, but the cookie was nice and chewy just like I like them!
