Ingredients

cup sugar

teaspoons finely shredded lime peel
2/3
cup Key lime juice

tablespoons butter or margarine (firm), cut up

eggs, slightly beaten
  • 1 Mix sugar, lime peel and lime juice in heavy 1-quart saucepan with wire whisk. Stir in butter and eggs. Cook over medium heat about 8 minutes, stirring constantly, until mixture thickens and coats back of spoon (do not boil). Cover and store in refrigerator until ready to use.
