Key Lime Curd
teaspoons finely shredded lime peel
cup Key lime juice
tablespoons butter or margarine (firm), cut up
eggs, slightly beaten
Mix sugar, lime peel and lime juice in heavy 1-quart saucepan with wire whisk. Stir in butter and eggs. Cook over medium heat about 8 minutes, stirring constantly, until mixture thickens and coats back of spoon (do not boil). Cover and store in refrigerator until ready to use.
