I used a mixture of dry roasted chopped peanuts and chopped pecans instead of the cashews. Also used butter instead of the shortening. I found the big cookies were too crispy and hard to get off the pan (I need a giant spatula), so I ended up making the remaining cookies as smaller ones. Very tasty. Also added white and regular choc. chips.

YUMMY!! Even my youngest, 6, loves these & she doesn't care much for nuts. Definitely will add to recipe box and make again & again. A great snack--what could be healthier with all the oats and nuts?--LOL.

So easy to make. Everyone loved them. When I made the cookies, I dropped them tablespoon size.......smaller than recipe suggestion. They were plenty big enough!

It is a cookie, not a diet cookie, if the calories offend you maybe don't eat the whole batch at one time. Make smaller cookies and then they will last longer. Why all the trouble of making them with less calories?

Just to make sure everyone understands, Gingerpeachy is saying one can ELIMINATE about 1000 from this recipe by doing as she says, not that it brings the total calorie count to 1000. Though I calculated calories and found that my total does not equal Betty Crockers’(this may be due to the fact that I am unable to find how many oz. of chopped cashews equal 1 cup and so I just figured the calories on 1c. whole and halves), it came close (4273 vs. 4480). There are many ways to shave off calories in this recipe, but I don’t know how good the cookies would taste: using HeartSmart Bisquick vs. Original saves 150cal.; using egg substitute vs. eggs saves 50cal.; every 1/2c. butter substituted with natural or sugarless applesauce saves 375cal., substituting ALL the butter for applesauce saves 750cal.; and 1/4c. packed brown sugar contains 207cal. so by eliminating it you save... 207cal. If anyone wants to try making ALL of these substitutions and eliminations…please let us all know how they turn out, but they sound just AWFUL!

I think if you substitute applesauce for the shortening and eliminate 1/4 c. of the brown sugar, the calories would come down about 1000 calories for all the cookies.

Not having tried to make this cookie,I can't comment on its flavor or texture, but, looking at the recipe, it appears that a quick way of reducing the calories would be to make smaller cookies. 1/4 c. of dough makes a pretty good sized cookie! Of course, another way to reduce the calories is to only eat one.

I had to come back to change my review. We had some unexpected company and I offered them a cookie and they really like them. So I guess I spoke here too soon. But I do know when I make them again I will add white chocolate chunk as these people thought they were Macadamine Cookies.
