When you have lots of cookies to bake and just 1 or 2 cookie sheets, pick up cooking parchment paper near the aluminum foil at your supermarket. Just tear off the length of paper you need to cover your cookie sheet and place it curled side down on the cookie sheet. When cookies have baked, just slide the baked cookies along with the parchment paper off the cookie sheet onto the cooling rack. In no time, you'll have a cooled cookie sheet ready for the next batch.
Remember that assembly lines can make tasks go faster. Line up your kitchen helpers. One person frosts cookies, the next adds the licorice for the hat, and the third person adds the raisins and cinnamon candies. Another time, let each person be as creative as they want with their own set of cookies, frosting and trimmings.
