  • 1 Jell-O Poke Cupcakes Cupcakes 2 cups all purpose flour 1 1/2 cups sugar 2 1/2 teaspoons baking powder 1 teaspoon kosher salt 1/2 cup shortening, very soft (almost melted) 3/4 cup whole milk 2 large eggs, at room temperature 1 Tablespoon vanilla extract 1 (3 ounce) package strawberry jello 1 cup boiling water Whipped Cream Cheese Frosting 1 1/2 cups heavy whipping cream 3/4 cup powdered sugar, sifted 1 (8 ounce) package cream cheese 1/8 teaspoon kosher salt 1 teaspoon vanilla extract In a bowl of a stand mixer with the paddle attachment, mix together the flour, sugar, baking powder and kosher salt. Add in the shortening and mix to combine. Then add in the milk, eggs and vanilla extract. Mix until the batter is almost combined. Then take a spatula and fold the ingredients together to completely combine. Line a cupcake pan with cupcake liners. Scoop the batter into the cupcakes liners and fill each one 2/3 of the way. Bake the cupcakes at 350 degrees for 20 minutes.
  • 2 Once the cupcakes are done, poke holes in the cupcakes with a fork. Set the cupcakes aside. In a large bowl, mix together the strawberry jello and boiling water. Very slowly pour 1 1/2 Tablespoons of strawberry jello liquid over each cupcake. Chill the cupcakes in the refrigerator overnight. The next day, make the frosting. In a bowl of stand mixer with the whisk attachment, mix the heavy whipping cream on high speed until stiff peaks form. Put the whipped cream in another bowl and set aside. You don’t have to clean out the bowl that you used to whip the heavy whipping cream. In the same bowl, add in the powdered sugar, cream cheese, kosher salt and vanilla extract and mix it with the paddle attachment on medium speed for about 4 minutes until smooth. Add in the whipped cream and fold it into the cream cheese mixture with a spatula. Frost the cupcakes and if you like, decorate with sprinkles! Enjoy!
