Italian White Beans with Turkey

tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves

garlic clove, finely chopped

cups cut-up cooked turkey or chicken

cup chopped sun-dried tomatoes in oil, drained

cup sliced ripe olive

cans (15 to 16 ounces each) great northern beans, rinsed and drained

  • 1 Heat oil in 10-inch skillet over medium heat. Cook basil and garlic in oil 3 minutes, stirring frequently.
  • 2 Stir in remaining ingredients. Cook, stirring frequently, until hot.

True Italian white beans are cannellini beans; these white beans are a form of kidney beans that originated in South America. Great northern beans, although slightly larger, are a common substitute for cannellini beans.
