Easy Italian Vegetable Focaccia Sandwich

Ingredients

  • 1 round focaccia bread (10 to 12 inches in diameter)
  • 2 cups shredded mozzarella cheese (8 ounces)
  • 2 cups deli marinated Italian vegetable salad, drained and coarsely chopped

Steps

    Sprinkle bottom half of focaccia with 1 cup of the cheese. Spread vegetables over cheese. Sprinkle with remaining cheese.

    Top with top of bread. Cut into wedges.

  • Focaccia, an Italian bread shaped into a large, flat round, is often drizzled with olive oil and topped with Parmesan cheese before baking.
  • Look for focaccia in the bakery, deli or frozen-food section of the grocery store.
  • Using already-shredded mozzarella cheese is certainly easy. For slightly different Italian flavor, shred provolone cheese, which has a slightly smoky flavor, or Fontina cheese, which has a subtle nutty flavor.
