bag (1 lb) fresh cauliflower florets or 1 small head cauliflower, separated into florets (3 cups)

bag (10 oz) mixed salad greens or 1 small bunch curly endive, romaine or chicory, torn into bite-size pieces

cucumber, sliced

cans (5 oz each) tuna, drained
1
jar (2 oz) diced pimientos, drained (1/4 cup)
1/3
cup Italian dressing
1/4
cup Betty Crocker® Bac~Os® bacon flavor bits or chips
  • 1 Toss all ingredients except dressing and bacon flavor bits in large salad bowl; refrigerate.
  • 2 Just before serving, toss with dressing and bacon flavor bits.

Expert Tips

Also delicious made with chicken instead of tuna.

Enjoy this salad twice by adding dressing and bacon bits to only half of the veggie mixture. Combine remaining ingredients the next day, and use to fill pita pockets for a Mediterranean twist on a tuna salad sandwich.

We really enjoyed this salad! I added the artichokes and black olives and some chopped red pepper and topped it with the grated Parm. I'm sure we'll be preparing this all summer!

This is totally fantastic .The only thing i added was artichoke hearts chopped well andolives and fresh grated parm. cheese.!!! Use canned chicken breast for a totally easy dinner on a hot summer night.
