medium dark-orange sweet potatoes (2 lb), peeled, cut into 1/4-inch slices*

cup shredded Gruyère cheese or 6-cheese Italian blend (4 oz)

can (18 oz) Progresso™ Recipe Starters™ creamy Parmesan basil cooking sauce

cup whipping cream
1/2
cup Progresso® Italian style bread crumbs
  • 1 Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Arrange half of the sweet potatoes overlapping in dish. Sprinkle with 1/2 cup of the cheese; repeat layers.
  • 2 In medium bowl, mix cooking sauce and whipping cream. Pour mixture over potatoes. Cover dish with foil.
  • 3 Bake 25 minutes. Remove foil; bake uncovered 25 to 30 minutes longer or until potatoes are tender and edges are browned. Sprinkle with bread crumbs. Let stand 10 minutes before serving.

Gruyère is a rich, smooth, firm cheese with a mild, nutty, slightly sharp flavor that is stronger, but similar to Swiss cheese. Or try 6-cheese Italian blend, which includes mozzarella, Monterey Jack, provolone, Asiago, Parmesan and Romano.

*Red garnet sweet potatoes or any of the deep orange varieties offer an especially intense color and flavor.
