Italian-Style Meat Loaf

Ingredients

jar (14 oz) tomato pasta sauce

cup Progresso® Italian style bread crumbs
1
large onion, finely chopped (1 cup)

teaspoons Italian seasoning
1/2
teaspoon salt
2
lb lean (at least 80%) ground beef
1
box (7.2 oz; 2 pouches) Betty Crocker® roasted garlic mashed potatoes
2 1/2
cups milk
1 1/2
cups hot water
1/4
cup butter or margarine
1/2
cup grated Parmesan cheese

Directions

  • 1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, beat eggs. Stir in pasta sauce, bread crumbs, onion, Italian seasoning, salt and beef until well blended. Press mixture in bottom of baking dish.
  • 2 Bake 45 to 55 minutes or until meat thermometer inserted in center of loaf reads 160°F.
  • 3 Meanwhile, make both pouches of mashed potatoes as directed on box, using milk, hot water and butter.
  • 4 Spoon any excess juices from baking dish. Spread mashed potatoes over meat loaf; sprinkle with cheese. Bake 10 to 15 minutes longer or until top begins to brown. Let stand 5 minutes before cutting.

Expert Tips

One teaspoon each of dried basil and oregano leaves can be substituted for the Italian seasoning.

For extra flavor and spiciness, use bulk Italian pork sausage for part of the ground beef and add 1 teaspoon crushed red pepper flakes to the pasta sauce.

Everytime I make this I end up having someone over who tries it and LOVES it. I was on a quest to find the best meatloaf when i found this recipe a few yrs ago. I have since had several people ask me for the recipe and I grudgingly tell them where it can be found ;) I use plain old world style sauce when i make it but i use 1/2 ground pork, half hamburger when i make it. Im writing this now because I made it for a friend after she had her baby (as my hubby did for me) and she wanted the recipe. Now Im making it for dinner in a few days!

this was ok. my boyfriend loved it but the rest of us did not. important note - the directions here for the instant potatoes are NOT the same as on the package. might try it again with a few modifications.

the kids loved it! it didn't cook up like a tradtional meat loaf but i also used a sauce with garden veggies in it. also i made home made redskin mashed potatoes instead of instant.
