Ingredients

pound Mild Italian Sausage

Tbs butter
3
cloves chopped garlic
1
small chopped shallot
1
cup chopped red onions
1
cup chopped red bell peppers
2
stalk thinly sliced celery
2
medium chopped carrots
1
15 oz can fire-roasted diced tomatoes
1
15 oz can Cannelini beans
6
cups chicken stock
2
tsp Italian herb seasoning
1
Tbs parsley
1
tsp sea salt
1/4
tsp black pepper
1/2
pound small pasta

  • 1 In a big heavy saucepan, brown and break up sausage; drain if necessary. Add butter, garlic, shallots, onions, bell peppers, celery and carrots; saute until vegetables start to soften. Add tomatoes, beans, spices and stock. Simmer 30 minutes.
  • 2 Add pasta and simmer 5 minutes or until pasta is al dente.
  • 3 if desired, after ladling soup into your bowl, garnish with fresh grated parmesan cheese.
