pound Mild Italian Sausage

cloves chopped garlic

small chopped shallot

cup chopped red onions

cup chopped red bell peppers

stalk thinly sliced celery

medium chopped carrots

15 oz can fire-roasted diced tomatoes

15 oz can Cannelini beans

cups chicken stock

tsp Italian herb seasoning

pound small pasta
  1. In a big heavy saucepan, brown and break up sausage; drain if necessary. Add butter, garlic, shallots, onions, bell peppers, celery and carrots; saute until vegetables start to soften. Add tomatoes, beans, spices and stock. Simmer 30 minutes.
  2. Add pasta and simmer 5 minutes or until pasta is al dente.
  3. if desired, after ladling soup into your bowl, garnish with fresh grated parmesan cheese.
