I used to make these (or attempt to make these) for my Italian husband without using the Betty Crocker Sugar Cookie mix. They would run all over the parchment paper and never quite set up. What a difference the Betty Crocker Sugar Cookie mix makes! These are as good as the ones sold in any Italian Bakery, if not better. I make a half-batch without nuts; the cookie alone is outstanding, even without the pine nuts. Thanks you, Betty Crocker, for making a once difficult recipe easy to make and incredibly well-received!

These look delicious! Do the pine nuts have to be toasted before adding to the cookies?

I usually make my own cookie dough, but these cookies were awesome. I can hardly keep from eating them all myself. I will be making another batch for Christmas sharing. I was very surprised at how good and chewy there are. Be careful not to over bake them. They don't look quiet done, but when you take them out and let me sit a couple minutes before taking them off the pan, they brown up. I did not roll them in the pine nuts, but rather just put them on top. Delicious!

Excellent cookies. I think next time I would add a touch less sugar though.
