Ingredients

Basil Vinaigrette

  • 1/3 cup olive or vegetable oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
  • 1 teaspoon sugar
  • 1/4 teaspoon salt

Salad

  • 6 cups chopped romaine lettuce
  • 1 cup chopped fresh basil leaves
  • 1 cup cut-up cooked chicken
  • 2 large tomatoes, chopped (2 cups)
  • 2 medium cucumbers, chopped (1 1/2 cups)
  • 1 package (3 oz) Italian salami, chopped
  • 1 can (15 to 16 oz) cannellini beans, rinsed and drained

    In tightly covered container, shake all vinaigrette ingredients.

    In large bowl, place all salad ingredients. Pour vinaigrette over salad; toss until coated. Serve immediately.
