Ingredients

boneless skinless chicken breasts (about 4 oz each)
3/4
cup Wheaties® cereal, finely crushed
1/4
cup Bisquick Heart Smart® mix
3/4
teaspoon Italian seasoning
1/4
teaspoon garlic powder
1/4
cup fat-free egg product
1
tablespoon vegetable oil

  • 1 Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
  • 2 In shallow dish, stir cereal, Bisquick mix, Italian seasoning and garlic powder. In another shallow dish, place egg product. Dip chicken in egg product, then coat with cereal mixture.
  • 3 In 10-inch nonstick skillet, heat 1 1/2 teaspoons of the oil over medium-low heat. Add chicken; cook 4 minutes. Turn chicken; add remaining 1 1/2 teaspoons oil to skillet. Cook 5 to 6 minutes longer or until chicken is no longer pink in center.

I have to agree with pulimom. But I also love Cilantro, so I would be happy with either. I think I will try baking it also.

I wonder if this could be put in the oven and baked like "Shake and Bake" which would cut the fat tremendously. After baking, it could be topped with a small amount of Fat Free Italian Dressing for added flavor.
