Like a blast of Mediterranean sunshine, this easy chicken sandwich is unmistakably Italian, with sun-dried tomatoes, pesto, and balsamic vinegar.

Ingredients

cup basil pesto

tablespoon plus 1 teaspoon balsamic vinegar

focaccia breads, each cut horizontally in half

oz thinly sliced oven-roasted chicken breast (from deli)

cup sun-dried tomatoes in oil, drained and thinly sliced

oz sliced mozzarella cheese

  • 1 In small bowl, mix pesto and balsamic vinegar. Spread mixture on bottom half of each focaccia bread. Top with chicken, tomatoes and mozzarella.
  • 2 Top each with other half of focaccia bread.

Expert Tips

Focaccia is a good choice for this sandwich because the bread is hearty enough to hold the pesto and soak in the balsamic vinegar.

Don't care for sun-dried tomatoes? Use fresh tomatoes instead.
