Ingredients

bag (22 oz) frozen waffle fries
2
cups shredded Cheddar cheese (8 oz)
1
cup shredded cooked chicken
5
slices bacon, crisply cooked
1/4
cup sliced green onions (4 medium)
2
jalapeño chiles, sliced
Old El Paso® Thick ‘n Chunky salsa
Sour cream

Directions

  • 1 Heat oven to 450°F. Place waffle fries on ungreased cookie sheet.
  • 2 Bake 20 minutes. Remove from oven.
  • 3 Set oven control to broil. Top waffle fries with 1 cup cheese, the chicken, remaining cup of cheese, the bacon and chiles.
  • 4 Broil 2 minutes or until cheese is melted. Serve warm topped with salsa and sour cream.

As a time-saver, buy a rotisserie-cooked chicken at the supermarket and shred the meat.

Line cookie sheet with parchment paper so “nachos” are easy to remove from the sheet.

These nachos are amazing! We followed the recipe but also added diced green chilis, tomatos, corn, and black beans. Plus I spiced up the chicken when I was cooking it. Again amazing recipe!

Loved these nachos! The chicken was a different component than we are use to on nachos, but was good. This can be made without the chicken as well. I seeded and diced the jalapeno to make them more mild, wished I hadn't so I could get extra zing. The recipe doesn't tell you when to add the chopped green onions. I just chopped the green tops and used for garnish after they were done. Watch the broiling process extra close. Took maybe 1 minute and don't move your rack up to broiler position.
