Ingredients

1: pouch (1 lb 1.5 oz) Betty Crocker® double chocolate chunk cookie mix

1/4: cup vegetable oil

2: tablespoons water

1: egg

1/2: cup marshmallow creme (from 7-oz jar)

1: bag (10 oz) peanut butter chips (1 2/3 cups)

2: tablespoons shortening

Directions

1 Heat oven to 350°F. Make cookie dough, using oil, water and egg, and bake as directed on package. Cool completely.
2 Spoon about 1 teaspoon of marshmallow creme on the bottom of half of the cookies. Top each with a second cookie, bottom side down; gently press together.
3 In small saucepan, heat peanut butter chips and shortening over low heat, stirring frequently, until melted and smooth. Spoon about 2 teaspoons peanut butter mixture over each cookie, spreading with back of spoon over top and side. Place on waxed paper. Let stand 30 minutes or until set.

Use the leftover marshmallow creme to make easy s’mores—just spread on a graham cracker, top with a piece of chocolate candy bar (softened slightly in the microwave) and a second graham cracker.

I made thhese cookies before christmas, wow were they good. Didnt't last more that three days. That was fine cause if left out or covered they tend to get a little hard. Three day limit on those good cookies. Gave one to my supervisor, she loves em. And she looks forward to my experiments with baking. I like them just the size they are and I use a 1 1/2 teaspoon full scoop (like in Ice cream). Really easy to make but look like you spent all day at least. I just swirled the marshmellow cream on the cookie, didn't try to put lots in it. The topping went easy that way too just put it on top and swril it on the sides too. Oh so good.

Made this recipe on Saturday for a Monday work cookie swap. Asked the boyfriend to taste one and let me know what he thought. He thought he should be bringing them to the football game on Sunday... So, I made a second batch on Sunday. The only thing I changed was to use a little less batter to make the cookies (made them a bit smaller and more cookie swap friendly) and used a little bit less marshmallow filling, as it had the tendency to ooze if too much was used. All in all, this recipe is a hit at our house and am looking forward to my co-workers appraisal this afternoon. Thank you for such a great and easy recipe!
