Easily create a truly refreshing cocktail any time of year. This infused rum cocktail made with cucumbers and mint can be served individually or as a punch.

750ml bottle lemon flavored light rum

medium cucumbers, peeled

large fresh mint leaves

12 ounce can frozen limeaid mix

12 ounce can lemon-lime flavored soda

tablespoon grenadine
  1. Peel cucumbers and thinly slice. Wash mint leaves and gently tear into small pieces Place in large bowl or pitcher with air tight cover.
  2. Pour entire bottle of rum into container. Cover, refrigerate, and let soak for 24 hours.
  3. Make the lime-aid in a large pitcher according to package directions.
  4. Strain mint and cucumber from rum. Dispose of the mint and cucumber, reserving the rum.
  5. Add the infused rum, soda and grenadine to the lime-aid, and gently stir together.
  6. Chill until serving.
