A flavorful mix of zucchini, tomatoes and cheese baked in a pie. Ahh, if all pies could be this easy.

I made this last night for dinner and it was one of the worst recipes from BC I have ever tried. I even added some basil and dill as suggested in the comments and still was not at all tasty. VERY BLAND. Needs more that salt, pepper and basil. Maybe even a different cheese would be better. Will shred this recipe.

No one will believe this, but cooking is just not my thing..even this didn't work out like I hoped it would! I just started making these "easy pies" and made this one tonite. I was disappointed in it...wish I had read the reviews before I made it. It was not like a firm pie, like I hoped it would be. But I think adding more cheese and zucchini, and maybe more dough mix would be better. I hoped it would be thicker and more dense...will try again!

I served this pie as a side dish with a favorite meatloaf recipe. I used some extra tomatoes and zucchini to make a really colorful dish. It was excellent!

Got this recipe a year or two ago and have made it a couple of times. One time I added some crab(would be better with shrimp) and always thougt with the addition of bacon or sausage it would make a good breakfast dish. Always nice to have a new idea for zucchini - They seem to produce at a prodigious rate.

This makes for a simple, economical summertime meal when the zucchini and tomatoes are growing in the garden. I like to add some chopped fresh basil. Enjoy!

Excellant! I love these Impossibly Easy recipes, and any recipe that gets hubby to eat veggies, gets a gold star, and this recipe did that. I want to thank the member that suggested mixing the zucchini, tomatoes, onion and cheese into the mix, instead of layering, works very nice. To also compliment the zucchini and tomatoes, I added Dill Weed to the mix. This pie disappeared fast, with being asked when it was being made again. Thanks again, BC!

My family loved this Zucchini Pie recipe. It was easy and so good. The second time I made this recipe I added chopped ham. It was a real hit...

Made the zucchini pie today. Really good and light and tasty, used eggs and regular flour with about 1 tsp. of baking powder because I was out of Bisquick. Turned out beautiful. Next time, I may try more zucchini and maybe chopped red bell peppers. Used grated cheddar cheese this time. Worked out. Will make again soon. Thanks
