My, what a pie! A savory blend of cheddar cheese and broccoli in a pie that makes its own crust while it bakes.

I made this in a 10 Pampered Chef pan. I did not pre cook the broccoli but rather chopped it and sprinkled it, the peppers, onion and cheese in the bottom of the pan. I mixed 1 and 1/2 the recipe poured over ingredients added more provolone and muenster cheese and baked for 30 min. This turned out AMAZING and will make it again. Very versatile with many fresh veggies.

Very savory. I made this as I had lots of fresh broccoli and gluten free Bisquick. I didn't have fresh peppers and I carmelized the onions and added a bit of the Christmas ham leftovers from the freezer. In 35 minutes it was done perfectly. I used extra sharp cheddar from Sam's club and the cheese flavor is great. I can imagine many ways to make this. The gf Bisquick is pricey so I like that this recipe only uses half a cup. Highly recommend this recipe:-)

I only had frozen mixed veggies and broccoli, no fresh veggies. I did it anyway, not cooking the veggies first, just mixed it all together, threw it in a pie pan and baked it for 45 minutes. It could have actually baked a little longer I think, and I'll use a glass pan next time instead of a non-stick, but this is an awesome recipe and very versatile. I would add more cheese next time, but besides that and depending on your oven, cooking it a little longer, perfect recipe!

Just made this pie. Had a craving for spinach pie, so I cooked some spinach,(about a cup) and added about a cup of diced canned tomatoes with Italian spices, drained, about a cup of chopped onions and shredded Colby/Jack cheese. Was absolutely delicious. Yes, this recipe is very adaptable to all kinds of great veggie combos. Thanks

This is a great recipe! It was delicious. I used frozen brocolli & cauliflower but next time I will use fresh. It got a little too soft. I sauteed the onions, peppers, & 2 garlic cloves before adding to brocolli. I added sliced grape tomatoes & extra cheese. It came out excellent except for the overly soft brocolli......Love it anyway! Ive also made the the Impossible cheeseburger pie. Thats excellent also.....

eexciting discovery...you can use just about any vegetable....I have a large home garden I pulled zucchini..banana peppers...to that I added grape tomatoes sliced..... scallion minced .... fresh rosemary and thyme...shredded cheddar and VOILA! masterpiece fresh vegetable pie...using the impossible recipe to make all things possible!

This recipe is so versatile. You can add mushrooms and any other vegetable you want to this and it is always a hit. My Grandmother always made two for my sons when they went to visit. One was not enough. For a quick and tasty meal this is one of my favorites.

kind of like hot pockets, could be baked in individual serving size; i.e. mini loaf pans or muffin tops. liked the addition of dry mustard or dijon, swiss cheese would be good
