Ingredients

1: tablespoon butter or margarine

4: medium green onions, sliced

2: garlic cloves, finely chopped

1: package (10 ounces) frozen chopped spinach, thawed and squeezed to drain

1/2: cup small curd creamed cottage cheese

1/2: cup Original Bisquick® mix

1: cup milk

1: teaspoon lemon juice

1/4: teaspoon pepper

3: eggs

3: tablespoons grated Parmesan cheese

1/4: teaspoon ground nutmeg

Directions

1 Heat oven to 350ºF. Grease 9-inch pie plate. Melt butter in 10-inch skillet over medium heat. Cook onions and garlic in butter 2 to 3 minutes or until onions are tender. Stir in spinach; spread mixture in pie plate. Spread with cottage cheese.
2 Stir Bisquick mix, milk, lemon juice, pepper and eggs until blended. Pour into pie plate; sprinkle with Parmesan cheese and nutmeg.
3 Bake about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Sprinkle with additional sliced green onions, if desired.

Drain the thawed spinach thoroughly; a wire mesh strainer works particularly well. Added liquid from the spinach can affect the flavor and increase the bake time.

aaah it was deeeeelicious! a big hit at my friend's house for the after funeral get-together. I really like it.. I ignored one part of the recipe that you sprinkled the nutmeg on top of milk mixture and parmesan cheese. Instead I put the nutmeg in the milk mixture so that it is even out. My friend could taste the nutmeg. I used 4% small curd cottage cheese and use whole milk... it makes a difference, really.. I usually use skim milk but decided not to. And as for 1/2 cup cottage cheese, I used more than it calls for.. and I used 7 X 11 pan.. It is nice because you can slice into squares.

I love spinach but thought this was kind of bland. If I make it again I will try the suggestion of adding feta cheese. I think that would give it the kick it needs. I put dill in it because I didn't have nutmeg and I did like that flavor in it.
