Ingredients

cups Green Giant® whole kernel corn

medium green onions, chopped
1
can (15 oz) Progresso® black beans, drained, rinsed
1/3
cup shredded Cheddar cheese
1/2
cup Original Bisquick® mix
1/2
cup Old El Paso® Thick 'n Chunky salsa
1/2
cup milk
2
eggs
Additional Old El Paso® Thick 'n Chunky salsa

Directions

  • 1 Heat oven to 400ºF. Grease 9-inch pie plate. Layer corn, onions and beans in pie plate. Sprinkle with cheese.
  • 2 Stir Bisquick mix, milk, 1/2 cup salsa and the eggs until blended. Pour into pie plate.
  • 3 Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with salsa.

I'm not usually a big fan of black beans, but this was a fantastic recipe. And I didn't just tolerate the beans either; the recipe has the perfect combination of ingredients that I actually enjoyed them. We served this with extra salsa and grilled chicken on the side, which a great combination, but this is a good option for a meatless meal too! It was outside my usual, picky, comfort zone, but I loved it!

This is how I did it, for Southwestern, it needed spicing up! Saute 3/4 cup chopped red onion, 1 diced med grn bell pepper, 1 minced jalapeno/serrano pepper & 1/2 lb. gr turkey, until meat is cooked thru & veggies are crisp tender; stir in 1/4-1/2 tsp. chipotle chile pepper, 1 1/2 cups corn and 15 oz can bl beans. Spray 9" pie dish with PAM; spread mixture in dish, sprinkle with 4-cheese Mex blend, whisk together bisqisk, salsa, milk & eggs, pour over cheese & bake according to recipe. Fabulous!

This is a good recipe.. But I changed the black beans to pintos as my family doent like the Black beans.. I also added, the green chilis and some chopped jalapenos and anaheims and more salas and cumin.. after that it was really great and had lots of southwestern taste.I like to use the mexican cheese also..
