Impossibly Easy Salmon-Asparagus Pie

Ingredients

lb asparagus spears, cut into 1-inch pieces (2 cups)
4
medium green onions, sliced (1/4 cup)
1 1/2
cups shredded Swiss cheese (6 oz)
1
can (6 oz) salmon or 1 can (5 oz) tuna, drained, flaked
1/2
cup Original Bisquick® mix
1
cup milk
2
eggs
1 1/2
teaspoons chopped fresh or 1/2 teaspoon dried basil leaves
1/8
teaspoon pepper

Directions

  • 1 Heat oven to 400ºF. Grease 9-inch pie plate. Sprinkle asparagus, onions, 3/4 cup of the cheese and the salmon in pie plate.
  • 2 Stir remaining ingredients until blended. Pour into pie plate.
  • 3 Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake about 2 minutes longer or until cheese is melted. Cool 5 minutes.

Expert Tips

A 10-ounce package of frozen asparagus cuts, thawed and well drained, can be substituted for the fresh asparagus. Decrease milk to 3/4 cup, and increase Bisquick mix to 3/4 cup.

Refrigerate asparagus upright, with stems standing in about an inch of water, and cover the asparagus and container with a plastic bag.

For even easier ingredient preparation, use a kitchen scissors to snip the green onions.

Since I love salmon, swiss cheese and asparagus this recipe seemed perfect. I followed the recipe exactly and the result was very bland and not very flavorful. I even added extra cheese afterward but that did not help the flavor. I doused it with hot sauce and was able to eat one serving of it but unfortunately couldn't eat the rest. The dogs were happy at dinner time but sadly I was very disappointed with this recipe.
