slices bacon, crisply cooked and crumbled

medium green onions, sliced (1/4 cup)
1/3
cup chopped roasted red bell peppers, from 7-ounce jar, drained
1/2
cup crumbled feta cheese
3/4
cup Original Bisquick® mix

cup milk

teaspoon dried basil leaves

eggs

Directions

  • 1 Heat oven to 400ºF. Grease pie plate, 9x1 1/4 inches.
  • 2 Mix bacon, onions and bell peppers in pie plate. Sprinkle with cheese. Stir remaining ingredients in medium bowl until blended. Pour into pie plate.
  • 3 Bake 30 to 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

Excellent with some modifications to be vegetarian: -omit bacon -add can artichokes (other suggested this--very good tip) -add loads of fresh basil -add diced tomato

I added artichokes and regular onion, tomato/basil feta and added a little pepper, nutmeg and mint to the bisquick topping and this was aaaaamazing!!!! My husband loved it :)

This was basic. To get great "greek" flavor add 1/2 box of frozen/thawed/squeezed dry chopped spinach, sauteed with 1/2 a small chopped onion, 1/2 tsp. mint, 1/8 tsp. nutmeg, 1/4 tsp. garlic powder, salt/pepper to taste. Yes, season Bisquick mix with pepper.
