I made this recipe for a pot luck at work. I followed the recipe exactly. Instead of baking as a pie, I used a 12 cupcake pan and filled the paper line cups half way and baked for 25 mins. Made about 20. I let the mini cheesecakes cool for over an hour and placed in refrigator overnight. Next morning placed a small amount of carmel on the top. Everyone loved them! Going to make these for our Annual Family Thanksgiving Gathering for sure!!!

I make this pie at least twice every year for Thanksgiving and I always end up wondering why I wait till Thanksgiving to make it. It is one of my all time favorite pies, and no one ever believes how easy it is to make.

I make this the healthier way, with Splenda, Smart Balance, egg subs., non fat canned milk, whole wheat pastry flour to add to the Bisquick. Only problem is, cutting EIGHT pieces, we usually cut a nine inch pie into 6 pieces, 8 pieces are too small, for something that people don't usually eat every day, and are happy to have an indulgence now and then.

I made this on a whim for a church food sale and the response from the recipient was wonderful! I also made one for my husband who up until now has been a "traditional" pumpkin pie eater. He loved it.

I've adapted this recipe for diabetics and weight watchers by substituting Splenda for sugar, Egg Beater for eggs and using evaporated skim milk instead of regular. I make this pie pretty often and get compliments every time.

This was the first attempt at pumpkin pie, and everyone loved it. My mother-n-law and father-n-law had to have the recipe. They raved over and over again about how good this pie was. I hated giving them my secret, but they needed it for their Christmas party!
