My family loved these. They did suggest that the next time I make them to add some bacon bits, sprinkle some shredded cheese on top and have guacamole as a garnish. Definitely will be making these again.

This was the first recipe I saw on my BC Calendar, and I decided to try them for our New Year's Eve party. They were incredibly easy to make and were a great hit! Everyone raved about how good they were!

These are great for those early gotta run--getting ready for rodeo--or trips - type days. I do same with breakfast casseroles. Not too messy for car and great smiles.

I just have a question. Even using a non stick muffin pan,do you still need to use the non stick spray? Thank you

I made this for my family and they were a hit. Even my picky eater 12 year old loved them. They said it was like eating a hamburger without having the bun. I did a taco meat version as well. I cooked the ground beef along with an onion and then I drained the fat. I then added taco seasoning mix along with water as package directions. I made the Bisquick mix as this recipe stated. Followed same directions, batter then 1/4 cup of taco meat then I added some shredded cheese, and then batter again. Cooked for same amount of time and my teens loved it. Thanks BC for giving me ideas that even my picky eater and teens will eat as either a meal or as an after-school snack.
