For kms37334, I thoroughly drain the cooked sausage and give it a couple of minutes on a layer of paper towels to wick away the grease. That's why yours were greasy. This is an awesome recipe without the mushrooms-we don't eat mushrooms in my house. The green chiles, finely minced worked well in small amounts only to keep the flavor suitable for all ages. I used my commercial grade nonstick muffin pan with no problems since paper cupcake liners are too tacky looking for my taste. give it another try, please? I also made a meat-free version using soy-based sausage crumbles which came out beautifully and was wonderfully flavorful. This one's a keeper!

I made these for a church brunch. Very disappointed, though I made a couple of changes to the recipe.I used sage flavored sausage, so that eliminated the addition of sage. Since I don't care for mushrooms, I substituted chopped green chilies. Though I thoroughly drained the sausage mixture after cooking, the finished pies were extremely heavy and greasy. Not sure I will try this recipe again.

I made this recipe tonight and loved it. However, I did make a few changes. Since I am a vegetarian, I used Lightlife brand meatless sausage. I also added chopped green bell pepper (which is the perfect sidekick for onions). I omitted the sage, and also used Egg Beaters instead of real eggs (for no cholesterol). Oh...and I also used Cabot brand lactose-free light sharp cheddar cheese and lactose-free milk so that my brother could eat it also. He enjoyed it as well. It was very moist and delicious. I will definitely make it again.

cedarlane93 - To use dried herbs instead of fresh, just use 1/3 the amount. So, for this recipe you would use 3 teaspoons or 1 tablespoon dried sage. I prefer the dried sage leaves over the ground. If you are using ground, you might want to back down to 2 teaspoons. Enjoy!

I tried these for the first time over the weekend. These are truly fantastic if you like all the ingredients. My husband doesn't appreciate mushrooms but said these were excellent and to keep this recipe. I will try them with diced ham next time.

I served these to a group, and not a crumb was left! Several people wanted the recipe. I used fresh mushrooms, sauteed separately while the sausage and onions were cooking and canned ground sage in lieu of fresh. I am anxious to try them again with variations. I used non-stick tins and spray, and they practically jumped out!

Love the versatility of this recipe. I also tried it in a Mediterranean style: finely shredded spinach and finely diced tomato instead of the mushrooms; feta cheese instead of the cheddar cheese; and a dash of nutmeg instead of the salt. Yummy!

Great, easy versatile recipe! Liked it the way it's written, but love it using diced ortega chilies, jack cheese and finely shredded spinache instead of the mushrooms and cheddar cheese. Served this with some salsa spooned over the top of each mini-pie.
