This is one of my favorite go to dishes. I leave out the black olives and add more chiles and it's always a hit wherever I take it.

Really, really good! High in protein and with low fat cheese, I lowered the fat and calories. I always double the bisquik and eggs and milk. I just like it too much just to have enough for one meal! It was really good and I made some guacamole that really finished everything well. Yum. Can't wait for seconds tomorrow!

Made this last night and my husband and I loved it! Not sure why, but the crust turned out better than most of the other "Impossibly Easy" recipes I have made. I left out olives because I didn't have them and doubled the chiles. I think some black beans would be a good addition as well. Will definitely be adding this to the regular dinner cycle.

This would be a good recipe to serve to young children or others who don't tolerate spice well. However, with the sweetness of the corn and the barely-there amount of green chiles, this was entirely too sweet and too bland for our tastes.
