Impossibly Easy Italian Chicken Pie

Ingredients

cup grated Parmesan cheese
1 1/2
cups cut-up cooked chicken
1 1/4
cups shredded mozzarella cheese (5 ounces)
1/2
teaspoon dried oregano leaves
1/2
teaspoon dried basil leaves
1/2
teaspoon garlic powder
1
can (6 ounces) tomato paste
1/2
cup Original Bisquick® mix
1
cup milk
1/4
teaspoon pepper
2
eggs

Directions

  • 1 Heat oven to 400ºF. Grease 9-inch pie plate.
  • 2 Sprinkle Parmesan cheese in pie plate. Mix chicken, 1/2 cup of the mozzarella cheese, the oregano, basil, garlic powder and tomato paste; spoon over Parmesan cheese.
  • 3 Stir Bisquick mix, milk, pepper and eggs until blended. Pour over chicken mixture.
  • 4 Bake 35 minutes. Sprinkle with remaining mozzarella cheese. Bake 5 to 8 minutes or longer or until knife inserted in center comes out clean. Cool 5 minutes.

Tomato paste is made of tomatoes that have been cooked for several hours, strained and reduced to a deep red, richly flavored concentrate.

All this three-cheese pie needs for a delicious meal are some steamed fresh vegetables such as yellow beans or sliced summer squash. Treat yourself to a “dusty road” sundae later in the evening by sprinkling malted milk powder over vanilla ice cream.

Trade two for one: Use 1 teaspoon of dried Italian seasoning instead of the oregano and basil leaves.

An easy way to get tomato paste out of its can: Open the top and bottom of the can. Hold the can over the mixing bowl and push tomato paste through bottom end with a spoon. Use a rubber spatula to scrape any remaining tomato paste from the sides of the can.

Keep a few cans of canned chicken in your pantry so you can make this recipe anytime.

Remember this recipe the next time you make a large chicken dinner. It’s a great way to use up those few extra pieces.

Family loved this super easy dinner!! I did use a shredded pizza mozzarella mixed cheese, instead of just plain mozzarella . Also, an asagio with the grated Parmesan . I think this would be a great dish for a potluck dinner to bring:))

Can I say WOW!?!?! This is the perfect way to use leftover chicken!! I used some pizza sauce and spaghetti sauce for the tomato paste but I did add a bit extra since some of the reviews said it was a little dry...IT WAS PERFECT! Since the sauces are already seasoned, I didn't add the garlic, basil, but I did add a bit of oregano. I also added some parmesan to the bisquik mix...so yummy! I will be trying more of these pie recipes to my dinner menus to use leftover chicken---it's so easy!

he impossible pie had the blk pepper and oregano in the crust that i was looking for. don't know if i'll try this or noy. the crust measurements are what i was looking for. i'll probable adapt some of this.
