I made this for a party, but didn't have a pie plate - so I just put it in a small baking dish and served it as squares. People loved, loved, loved it. You will always have some who aren't big coconut fans - but even a few of those people were surprised because they had eaten it without realizing it was in there. There wasn't a single crumb left.

I made this recipe and took it to a church covered dish supper. Everyone wanted to know who made the pie. Luckily, I got a piece before everyone else even knew it was on the table. Some folks were disappointed they did not get a piece. To me, it had a nice custard taste without being heavy on the sugary sweet taste like most Coconut Pie recipes. Thanks to Betty Crocker, I am discovering some tasty recipes that fit my new gluten-free lifestyle. I will definitely make this recipe again!!!

My sister introduced me to this incredible pie years ago. Now it has become a family favorite. Besides being impossibly easy, it is IMPOSSIBLY YUMMY!!!!

This is by far the best pie I've ever made and it is so easy!! We've recently had to change our diet to dairy and gluten-free and this worked great! Not only is the taste amazing, but my house smells wonderful too :)

Going to try making this for my mom and sister,they both have a gluten intolerance so will be happy about a dessert they can actually eat..lol.Betty Crocker,I love all your gluten free reciepes but am disappointed that I cannot purchase gluten free bisquick in Canada!!!

I love these recipes. Not using a standard crust makes it so much lighter and refreshing. I even took it a step further and reworked it to be totally sugar free and lowfat. Really, only the coconut was the only fat that couldn't be removed. I used Splenda, "Healthy" Bisquick, low fat margarine, fat free half and half and Eggbeaters. I added light whipped cream on top and it was devine. Everyone loved it and I'm looking forward to making it again soon.
