Impossibly Easy Chocolate-Coconut Pie

Ingredients

cups milk
1/4
cup butter or margarine, softened

oz unsweetened baking chocolate
1
cup coconut
3/4
cup sugar
1/2
cup Original Bisquick® mix
1 1/2
teaspoons vanilla
3
eggs, slightly beaten
1
cup frozen (thawed) whipped topping

Directions

  • 1 Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In 3-quart saucepan, heat milk, butter and chocolate over medium heat 5 to 7 minutes, stirring frequently, just until chocolate is melted; remove from heat.
  • 2 In medium bowl, stir chocolate mixture and remaining ingredients except whipped topping with wire whisk or fork until smooth. Pour into pie plate.
  • 3 Bake 40 to 45 minutes or knife inserted in center comes out clean. Cool 30 minutes. Refrigerate at least 2 hours or until chilled. Garnish with whipped topping. Store in refrigerator.

I made this pie yesterday. It was delicious. I put in 1/2 a teaspoon of coconut extract but next time I will subtitue the entire teaspoon and a half of vanilla for coconut extract to make it taste more coconutty. I also added some mini chocolate chips and some pecans because I love them and it was my birthday.

For those who think the bake time is too short: I will bet my house that you used cold milk and cold eggs. Cooking 101: bring all ingredients to room temperature. If you do, the baking time is perfect.

This pie is delicious. I was worry that it was going to taste too much the eggs, but it came out perfect. I did change one ingredient, I substituted the vanilla extract for coconut extract. It really added more flavor to the recipe. My family and I liked it a lot, I will do it again!
