Impossibly Easy Chicken and Broccoli Pie (Crowd Size)

Ingredients

packages (10 ounces each) frozen chopped broccoli, thawed and drained
3
cups shredded Cheddar cheese (12 ounces)
2
cups cut-up cooked chicken
1
large onion, chopped (1 cup)
1
cup Original Bisquick® mix
2
cups milk
1
teaspoon salt
1/2
teaspoon pepper
4
eggs

Directions

  • 1 Heat oven to 400°. Grease bottom and sides of rectangular baking dish, 13x9x2 inches, with shortening. Sprinkle broccoli, 2 cups of the cheese, the chicken and onion in baking dish.
  • 2 Stir remaining ingredients until blended. Pour over chicken mixture.
  • 3 Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1 cup cheese. Bake 1 to 2 minutes or until cheese is melted. Let stand 5 minutes before cutting.

Two cups of cut-up cooked turkey or ham instead of the chicken would also work well. Keep this recipe in mind for using up leftovers from your Thanksgiving turkey!

Thaw the frozen broccoli in the refrigerator up to 24 hours ahead of time.

Made this for my family tonite for dinner. Just added a salad and it was a perfect rounded out meal. I used fresh steamed broccoli instead of the frozen. Have enough left over for another night for dinner. Definitely will make this again.

I made this last night and my husband and I both loved it. We ate it all and were disappointed that there were no leftovers. We liked it so much that I ended up making it again the second night. It's that good!! Next time I'll be making the recipe for the crowd size so we can have leftovers!

Rather bland. I added Thyme to spice it up a bit. I made it much lower calorie by using skim milk, egg substitute and 2% milk cheese. You can take the whole pan, make it 6 large servings and the calories are only 277 with the substitutions listed above.
