Impossibly Easy Chicken and Broccoli Pie (Crowd Size)

Ingredients

  • 2 packages (10 ounces each) frozen chopped broccoli, thawed and drained
  • 3 cups shredded Cheddar cheese (12 ounces)
  • 2 cups cut-up cooked chicken
  • 1 large onion, chopped (1 cup)
  • 1 cup Original Bisquick™ mix
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 eggs

    Heat oven to 400°. Grease bottom and sides of rectangular baking dish, 13x9x2 inches, with shortening. Sprinkle broccoli, 2 cups of the cheese, the chicken and onion in baking dish.

    Stir remaining ingredients until blended. Pour over chicken mixture.

    Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1 cup cheese. Bake 1 to 2 minutes or until cheese is melted. Let stand 5 minutes before cutting.

  • Two cups of cut-up cooked turkey or ham instead of the chicken would also work well. Keep this recipe in mind for using up leftovers from your Thanksgiving turkey!
  • Thaw the frozen broccoli in the refrigerator up to 24 hours ahead of time.
  • Purchase cut-up deli fruits for a salad, and let everyone enjoy a top-your-own ice cream sundae for dessert.
