This was very easy and very good! I usually make recipes as-written the first time I try them. But with this recipe, I went ahead and substituted regular cheddar with 2% (low fat) cheese and it was still excellent - light and fluffy, with a very good flavor (I warmed the salsa a little in the microwave, too).
