Impossibly Easy Calico Corn and Bacon Pie

Ingredients

slices bacon, crisply cooked, crumbled (1/2 cup)
1
small onion, chopped (1/4 cup)
1/4
cup chopped green bell pepper
1
can (7 oz) Green Giant® Niblets® whole kernel corn, drained
1
jar (2 oz) diced pimientos, drained
2
eggs, slightly beaten
2/3
cup Original Bisquick® or Bisquick Heart Smart® mix
1
cup milk
1/8
teaspoon pepper
Sour cream, if desired

Directions

  • 1 Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Reserve 2 tablespoons of the crumbled cooked bacon for garnish. Sprinkle remaining bacon, the onion, bell pepper, corn and pimientos in pie plate.
  • 2 In medium bowl, stir remaining ingredients except sour cream until blended. Pour into pie plate.
  • 3 Bake uncovered about 30 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serve garnished with sour cream and reserved bacon.

You can use 2 to 3 tablespoons of chopped red bell pepper instead of the pimiento, if you like.

Get a jump start on dinner! Mix up this tasty pie the night or morning before, then pop it in the oven when you get home. After adding all ingredients to pie plate, cover and refrigerate up to 24 hours. Uncover and bake 30 to 35 minutes (33 to 38 minutes at High Altitude).

Very yummy! Easy and quick to make. I added a cup of cheddar and also cooked the onion and bell pepper a little bit before adding to pie plate. Thanks for the recipe!

I added the mexican cheese to it!!! First time it was to bland and corny..Made it again and added the cheese/that time it disappeared fast!

It tastes like a corn casserole. But without cheese!? This was delicious with a cup of grated extra sharp cheddar added to it. Very good!:)
