slices bacon, crisply cooked, crumbled

cup shredded Swiss cheese (4 oz)
1/2
cup Original Bisquick® mix
1/3
cup mayonnaise or salad dressing
3/4
cup milk
1/8
teaspoon pepper

eggs

tablespoons mayonnaise or salad dressing
1
cup shredded lettuce
6
thin slices tomato

Directions

  • 1 Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Layer bacon and cheese in pie plate.
  • 2 In medium bowl, stir Bisquick mix, 1/3 cup mayonnaise, the milk, pepper and eggs with wire whisk until blended. Pour into pie plate.
  • 3 Bake 25 to 30 minutes or until top is golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving. Spread 2 tablespoons mayonnaise over top of pie. Sprinkle with lettuce. Place tomato slices on lettuce.

My 4 amd 5 year olds declared this the best thing ever! :) I used mozzerella cheese instead of swiss because that was what I had since I found this recipe right before I made it with no planning.

My husband will not eat any food containing store bought Mayo. He says it contains too many chemicals and that ruins the taste. So I have to make Mayo in my blender and I keep a jar of it on hand. OR if I'm in a hurry, I'll use Ranch dressing in place of the Mayo without him knowing it and he doesn't notice the difference. The seasonings in Ranch dressing are different than what they are in Mayo. This was a great tasting dish and I'll make it again and again. Thanks for sharing.( I've been making your impossible easy pies since you first offered them many years ago).
