Impossibly Easy Apricot Pie

Ingredients

1/2
cup Original Bisquick® mix
1
cup evaporated milk
1/2
cup sugar
2
tablespoons butter or margarine
1
teaspoon vanilla
2
eggs
1
can (8 1/4 ounces) apricot halves, drained and mashed
1/4
cup apricot preserves
Sweetened whipped cream, if desired

Directions

  • 1 Heat oven to 350ºF. Grease 9-inch pie plate. Stir together all ingredients except preserves and whipped cream until blended. Pour into pie plate.
  • 2 Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool completely, about 1 hour.
  • 3 Heat preserves over low heat until melted; spread over pie. Cool. Garnish with whipped cream. Cover and refrigerate any remaining pie.

1. It hasn't always been easy to find canned apricots in our grocery store, but our produce dept. has been selling them in jars so I have been making this on a regular basis. 2. I have used the Gluten free Bisquick with this successfully. 3. I do all the prep in my blender-puree the apricots first, then add the other ingredients. This is a very tasty dessert and I also feel that is at least somewhat healthy. It is also easy to keep most of the ingredients on hand. My husband and I both enjoy it. I don't even bother to put the apricot preserves on it. If it were possible to post a picture of my finished pie, I would do so.

This is an impressive dessert to serve to your guests! It's creamy, but still fruity. Watch the quality of your apricot preserves if you want the best flavor, though. Wonderful recipe!!

I used a little extra almond extract and an extra can of apricots(halved) to put over the pie,they fall in perfectly with the tops showing just abit, Family has me making it weekly!
