This was very tasty. I did substitute a sweet onion which I sauteed in butter for the green onion since I thought it would add more flavor and make it bit more savory - which it did. Probably added a touch more fat per serving though, but on the other hand I used skim milk so maybe it evened out lol. Might try a red onion next time. I also like the suggestion of one commenter of adding some Greek seasoning which I'll do the next time I make it, I think that's a great idea! Will definitely be making it again. Very easy to make (probably the biggest mess is straining the spinach) and makes a nice dinner with a salad. I think it's also a nice recipe for Summer as it's low cal and a lite meal. A keeper recipe for me, thanks BC & Biscquik!! Thumbs up from me!!

My family enjoyed this. I made the following changes: added leeks, swiss chard, garlic, and mushrooms along with fresh parsley, basil, and oregano I had on hand. For a gluten-free option, I subsituted a gf pancake mix for the Bisquick (sorry Betty Crocker. Also, I greased the pan with coconut oil because it was what I had on hand.

I added 1/2 pound cooked ground turkey, 1 tsp minced garlic and 2 tsp Greek seasoning. It came out very similar to a Greek taco recipe we love only less messy. This is definitely a keeper.

RE Kidd-Kaneo: The Bisquick, milk, salt, pepper, and eggs are all mixed together and poured over the spinach, cheese and onions in the greased pie plate. The Bisquick is not used for a separate crust as the recipe sets up and sort of forms its own "crust" rather than a pie with a pastry crust. Hope this helps. Happy baking!
