This is a very good and easy dessert. I have made it for years. I substitute 1 c. evaporated milk plus 1 c. water for the scalded milk. I like the flavour. it is less expensive and it makes the process so much easier than scalding the milk.
Anyhow, I think that scalding milk goes back to the days when milk was not pasteurized.
